The structural renovations, along with the operational and management system improvements, were not reactive; they were part of a pre-planned overhaul that had been scheduled for several months. Furthermore, our General Manager had only joined the business three weeks prior to the inspection.   The conditions on the day, whilst wholly unacceptable, were the result of an unprecedented combination of operational challenges that temporarily halted our pre-planned upgrades and the onboarding of our new General Manager.   A sudden family emergency led to my absence from the business for the two weeks prior to and following the inspection, forcing a pause on the building works. Additionally, the inspection date coincided exactly with our Head Chef's annual leave and our General Manager's scheduled day off. With the physical disruption of the paused building works and an unexpected absense in senior leadership on the day, our standards unfortunately fell below the high level to which we hold ourselves accountable.   Whilst the inspection happened at an unusually challenging time for us, it did expose some specific gaps in our legacy processes. This gave us an opportunity to stress-test our new workflows and refine them prior to full implementation.   Since the inspection, the site's upgrades have now been completed, and operations have returned to our normal high standards.
